Alaska Larry’s Moose Jerky

T Alaska Moose Hunting Guide oday I’d like to share my special jerky recipe!  First off, it obviously doesn’t have to be made with Hunt for Alaska Moose , you can use Hunt for Alaska Caribou , deer , sheep , Idaho Elk Hunts , etc.  You get the picture….

Ingredients:

3 tsp salt

3 tsp pepper

4 tsp liquid smoke

3 tsp brown sugar

1 cup of water

Pinch of hot crushed red pepper

Nice, semi-frozen chunk of the wild game meat of your choice

First, find yourself a nice average sized cake pan and mix all of the ingredients, with the exception of the red pepper and the meat, thoroughly.  This obviously is your marinade.  Then start carving jerky strips from your chunk of meat.  The reason I like it semi frozen is because it’s easier to cut nice thin slices that are very uniform in size.  Once you’ve cut enough slices to fill the cake pan, immerse them in the marinade and let sit in the refrigerator for approximately 12 hours.  Next prepare your food dehydrator or oven to 165 and place the strips on the racks.  I much prefer a food dehydrator for jerky, ovens can get messy and just aren’t nearly as efficient.  Once you’ve placed your strips on the racks, sprinkle just a tiny amount of the hot crushed red pepper on each piece of meat.  If you like your jerky “en fuego” by all means sprinkle more, but I like a mild heat personally.  After that, all you have to do is wait.  Your thinner pieces will be done in about 6 hours and your thicker ones in about 8.  Enjoy!

*One quick note.  It’s best not to keep homemade jerky completely sealed if you’re not using a preservative.  So let it get some air from time to time…*
